INGREDIENTS
- 1 bunch chives
- 1 box Ritz Crackers
- 1 lb king Crab meat center cut, cooked
Remulade
- 1 cup mayo
- 2 tbsp grain mustard
- half lemon juice
- 4 splashers worcestershire
- 1tbsp chopped chives
- 1 tbsp chopped dill
- 1 tbsp chopped parsley
- 3 tbsp chopped dill pickle
- 2 splashers hot sauce
- salt and pepper
METHOD
- For the Remulade, mix all ingredients and set aside.
- In a pot of boiling water quickly blanch and shock (ice bath) your chives.
- Very carefully carve crab into 1.5 inch lengths. Place a small teaspoon of Remulade on a Ritz and top with king crab.
- Gently tie a chive around the cracker and crab holding it in place. Place on platter and enjoy.
