Old School Canapes – Cocktail Meatballs

Ingredients

1 splash
Olive oil
1 nub
butter
1/4 cup
shallots, finely diced
1 tbsp.
garlic, finely diced
1/2 cup
dates, finely diced
1 cup
red wine
2 tbsp.
honey
1/4 cup
red wine vinegar
1/2 cup
stock
1 tbsp.
cornstarch slurry

Instructions

Method: 
  1. Mix breadcrumbs, milk, parmigiana and ground beef. Season and roll into small meatballs. Let rest.
  2. In a large cast iron pan, sauté garlic, shallots and dates. Add meatballs. Caramelize honey, deglaze with vinegar and red wine. Add stock and simmer for 10 minutes.
  3.  Add slurry and heat until desired glaze. Season and serve with toothpicks
