Mozzarella spring rolls

Enjoy a batch of mozzarella spring rolls filled with ricottta, pickled peppers, sun dried tomatoes and basil.

Ingredients

spring roll wrappers
1/2 cup
sundried tomato, drained of oil and pureed

sandwich pickles, slices cut in half
12 slices
smoked ham or prosciutto slices, very thin
12
mozzarella sticks, cut into 3 1/2 inch logs 1/2 inch thick
1/2 cup
ricotta fresca
Plenty
of vegetable oil, for frying

Instructions

Lay the spring roll wrap and lay a slice of prosciutto in the center and spread some tomato puree on it, spread some ricotta over it, place a piece or two of pickled peppers, half a slice of sliced pickle and a log of mozzarella on it, wrap like a spring roll and seal the edges with abrushing of water. Deep fry at 360˚ until golden crisp then cut in half and serve with your choice of dipping sauce. Dipping sauce recommendation:
  • Tomato & sweet chilli sauce
  • Caesar dressing as a dip
  • Balsamico Glaze, Sriracha & Oyster sauce
  • Basil Pesto Aioli
