If you’re looking to use up your fresh vegetables from the farmers’ market, take a look at Randy Feltis’ balsamic grilled vegetable tian!
Ingredients:
1 radicchio
1 avocado
1 endive
8 blue potatoes
2 Japanese eggplant
2 cobs of fresh corn
1 orange pepper
1 red onion
2 oz olive oil
2 cloves garlic
salt & pepper to taste
2oz balsamic vinegar
bunch fresh basil
Method:
– Preheat grill to high.
– Dice garlic, add to olive oil in large mixing bowl.
– Break down all veggies and blue potatoes into grill size pieces. Mix into a bowl with salt, pepper and garlic. – Add olive oil and balsamic and toss.
– Place onto grill and cook until semi soft.
– Remove corn from cob and mix with grilled blue potatoes.
– Build onto base of grilled blue potatoes and corn and make a colourful tower!
– Garnish with chopped fresh basil, aged balsamic and olive oil.
