Looking for a great summer entertaining dish? Take a look at these fun pulled pork mac and cheese quesadillas.
Ingredients:
2 cups pulled pork
¼ cup barbeque sauce
1 cup cooked and prepared Mac and Cheese
½ cup grated cheddar cheese
8-10 inch flour tortilla
Garnish:
½ cup sour cream
½ ripe avocado diced
½ cup tomato salsa
Juice of one lime
¼ head ice berg lettuce
1 tbsp chopped coriander
Method:

For this recipe go to your favourite barbeque joint or local market and purchase the pulled pork.
- Place the pulled pork into a clean bowl, add the barbeque sauce and mix thoroughly.
- Take the flour tortillas and place on the flat plate or wooded board and top with the pulled pork, ¼ inch thick and 1 inch away from the edge of the tortilla.
- Next, take the cooked and cooled Mac and Cheese, using a teaspoon place multiple dollops of the Mac and Cheese on top of the pulled pork.
- Next, sprinkle with the grated cheddar cheese, and then place a second tortilla on top, press down firmly insuring that the filling does not get pushed out of the edge.
- Place the quesadilla onto a lightly grilled barbeque over medium to high heat, close down the lid and allow crisping for 3-5 minutes, turning the quesadilla from time to time.
- While the quesadilla is cooking prepare the garnish as follows.
- Peel the ¼ head of iceberg lettuce so that you have a nice cup which you fill with sour cream, top with the diced avocado which is tossed quickly in the lime juice to prevent discolouration.
- Next, add your favourite salsa sweet, mild or spicy.
- Sprinkle with chopped coriander place on a serving platter. Carefully place the now cooked quesadilla onto a cutting board and cut into 6-8 pieces place on platter and ready to serve.
