Pulled Pork Mac and Cheese Quesadilla

Ingredients:

2 cups pulled pork

¼ cup barbeque sauce

1 cup cooked and prepared Mac and Cheese

½ cup grated cheddar cheese

8-10 inch flour tortilla

Garnish:

½ cup sour cream

  ½ ripe avocado diced

½ cup tomato salsa

Juice of one lime

¼ head ice berg lettuce

1 tbsp chopped coriander

Method:

  1. For this recipe go to your favourite barbeque joint or local market and purchase the pulled pork.

  2. Place the pulled pork into a clean bowl, add the barbeque sauce and mix thoroughly. 
  3. Take the flour tortillas and place on the flat plate or wooded board and top with the pulled pork, ¼ inch thick and 1 inch away from the edge of the tortilla.
  4. Next, take the cooked and cooled Mac and Cheese, using a teaspoon place multiple dollops of the Mac and Cheese on top of the pulled pork.
  5. Next, sprinkle with the grated cheddar cheese, and then place a second tortilla on top, press down firmly insuring that the filling does not get pushed out of the edge.
  6. Place the quesadilla onto a lightly grilled barbeque over medium to high heat, close down the lid and allow crisping for 3-5 minutes, turning the quesadilla from time to time.
  7. While the quesadilla is cooking prepare the garnish as follows.
  8. Peel the ¼ head of iceberg lettuce so that you have a nice cup which you fill with sour cream, top with the diced avocado which is tossed quickly in the lime juice to prevent discolouration.
  9. Next, add your favourite salsa sweet, mild or spicy.
  10. Sprinkle with chopped coriander place on a serving platter. Carefully place the now cooked quesadilla onto a cutting board and cut into 6-8 pieces place on platter and ready to serve.
