Not that there’s anything wrong with a turkey sandwich — especially one layered with stuffing and cranberry sauce! — but we wanted to come up with a few different and creative ways to use up those Thanksgiving leftovers. We’ve scoured our archives for these recipes that will make delicious use of the bird. Plus a few to help clean out that bottomless bowl of roasted sweet potatoes!
Leftover turkey:
There’s no way you’ll have turkey in the house for long with Sandi Richard by your side — try her Turkey in crunchy bread cups or her Tex-Mex turkey bake. Both add different flavours and textures to your Thanksgiving main.
Another great option is to treat your cooked turkey the way you’d treat cooked chicken! For example, try turkey instead of chicken in this pesto pasta with roasted tomatoes! You could also sub your poultry in this Moroccan-inspired Bastilla with spicy harissa dip, or these easy chicken tostadas!
Getting back to turkey sandwiches, why not amp yours up with different ingredients and flavours? Try this turkey grilled cheese with green apple and aged cheddar. Alternately, pair turkey and avocado in this delicious sammie!
Sweet potatoes:
If your family loves sweet potatoes as much as ours does, you might not actually have a ton of leftovers. But in case you do, here are great uses for those cooked sweet potatoes. Cooked pumpkin would work in most of these too!
Roasted sweet potato cubes would be delicious in this Harvest vegetable frittata. If you served your sweet potatoes mashed, they’re perfect for making into these Sweet potato salmon cakes with yogurt dill dressing, or this Roasted sweet potato soup with orange and ginger.
Alternately, turn Saturday dinner into Sunday brunch by saving your sweet potato puree for this delicious French toast!
Cranberry sauce:
Leftover cranberry sauce would work as a sweet-tart counterpoint to your morning yogurt, or your evening ice cream. Or, save it for this showstopper flourless chocolate torte, which is topped with a cranberry compote.
Vegetables and other odds and ends:
We here at Cityline are big fans of the lunch bowl/dinner bowl. Mix your leftover roasted veggies, turkey, and quinoa stuffing with fresh items such as lettuce and cherry tomatoes for a delicious lunch or dinner bowl. Whip up your favourite dressing, toss, and enjoy!
