Cooked lobster meat is available at most grocery stores and certainly in seafood shops.
Potato Stuffed with Lobster Salad
4 mini potatoes, any kind will do just pick golf ball size
1 1/2 cups lobster meat, finely chopped
2 tbsp celery, diced very small
2 tbsp green onions, chopped
2 tbsp mayonnaise
2 tbsp tarragon, chopped
1 lemon
Salt & pepper to taste
Cut each potato in half and scoop out as much flesh as possible without compromising the sturdiness, chop the flesh and add it to the lobster salad
Prepare the lobster salad by mixing the lobster meat with the celery, green onions, tarragon and the potato flesh; season to taste and add some lemon juice, add the mayonnaise to bring it together and fill each potato with a generous scoop of the mix.
Refrigerate if not served immediately
Served on a white platter with colourful microgreens around it
