Try using red quinoa in addition to the regular variety for an extra hit of colour on the plate.
Quinoa White Bean Salad with Celery and Peppers
1/3 cup regular quinoa
1/3 cup red quinoa
1 tin white (navy) beans, drained and rinsed
1 tin flaked white tuna, drained
1/2 cup diced red onion
1 cup diced celery
1 cup diced bell pepper (any colour)
3 Tbsp chopped fresh basil
1/4 tsp smoked paprika
2 Tbsp lemon juice
2 Tbsp olive oil
Salt & pepper
1) Bring 4 cups of water up to a boil. Rinse the quinoa well and add to the water. Simmer for about 10 minutes, until tender, then drain and rinse and place in a large bowl.
2) Add the remaining ingredients, toss and season to taste. Chill until ready to serve.
