Chef Randy Feltis just got back from his trip to Spain, and he was so inspired by the culture. Here is his recipe for easy croquettes, one of his three tasty tapas recipes the whole family can enjoy!
INGREDIENTS
- 20 large dates pitted
- 1 lb chorizo sausage
- 20 thinly sliced double smoked bacon
- 1/4 lb manchego cheese
- 1/4 cup chopped pistachio
- 1/4 cup garlic aioli
METHOD
Serves 6-10
Prep time 12 minutes
Bake time 14 minutes
Special tool: baking sheet
- Stuff each date with a small amount of sausage and cheese.
- Wrap with bacon and bake at 450 until crispy.
- Remove and let rest for 10 minutes, top with aioli and pistachio
