INGREDIENTS
- 1 large rutabaga peeled and diced 1/2 inch
- 4 ccups veggie stock
- 1 cup butter
- 2 tbsp maple syrup
- 1 tsp kosher salt
- 1/4 tbsp white pepper
Crust
- 1/2 cup panko breadcrumbs
- 1/2 cup breadcrumbs
- 2 tbsp chopped parsley
- 4 nubs butter
METHOD
- Simmer rutabaga in stock for 40-50 minutes or until tender.
- Strain excess liquid and mash.
- Add butter, maple syrup and season.
- Plate in casserole dish.
Crust
- In a medium pan, melt butter and mix in bread crumbs, parsley.
- Toast lightly and crust rutabaga.
- Bake for 5 minutes and serve.
