  1. In a stand mixer, cream butter and vanilla. Add sugar and kosher salt, then slowly add flour. Scrape down the bowl halfway through.
  2. Wrap dough in plastic wrap to make a long log. About the size of a Loonie, chill for an hour. Cut into coins about 5/8th of an inch.
  3. Bake at 350 on parchment paper until the first sight of tanning.
  4. Remove let cool, add a teaspoon of dulce de leche to the bottom, and make a perfect sandwich.
