INGREDIENTS
- 1/4 large seedless watermelon
- lime juiced
- 3 tbsp. feta crumbled
- 2 tsp. chives snipped
- 1 tbsp. mint chopped
- 1 tsp Tajin seasoning
- salt and pepper to taste
- 1 tbsp. toasted slivered almonds (optional)
METHOD
Method:
- Using a melon baller, ball out that wedge of watermelon. (Note: This also works with cantaloupe or honeydew, or a mix of the three.) If you don’t have a melon baller you can cut the fruit into chunks. But melon ballers double the fun.
- Place melon on serving platter or in a large bowl and squeeze lime juice overtop. Sprinkle with feta, chives, mint, Tajin, and salt and pepper to taste.
- Add toasted almonds, toss and serve at once. You want that watermelon to stay cold.
Tajin
Tajin is a sour and salty seasoning served with cut up street fruit in Mexico City. Tajin is available in most grocery stores and Latin supermarkets, but if you can’t find it substitute with pinches of chilli powder and salt. The lime will add the sourness.
