INGREDIENTS
- 1 whole rainbow trout
- 3 egg whites
- 3 cups kosher salt
- 1 splash olive oil
- ½ handful fresh thyme
METHOD
- Whisk egg whites to a stiff peak add salt, thyme and olive oil.
- Bake at 400 degrees until the internal temperature of 135 degrees or the outside is golden brown.
- Crack open and dive in with a squeeze of lemon.
