INGREDIENTS
- 4 ears corn
- 3/4 cup cotija cheese
- 1 zested lime
- 30 grams butter room temperature
- 2 tsp chili powder
- 2 tsp hot sauce
METHOD
- Pre-heat broiler to low.
- Bring a large pot of water to boil.
- Shuck corn and cook for 5 minutes.
- Pat dry and brush with butter and roast under the broiler until the colour is achieved.
- Then add chili powder, lime, lime zest, hot sauce, cotija and cilantro.
