Smoky cauliflower tacos with avocado crema

METHOD

  1. Cauliflower: Preheat oven to 400 degrees F (204 C) and add cauliflower to a large baking sheet. Add oil, cumin, chili powder, paprika, and salt. Toss to combine and roast for 20-25 minutes or until golden brown and tender.
  2. Avocado Crema: Mix all ingredients in a food processor or blender until smooth.
  3. Final: Fill each tortilla with cauliflower, shredded cabbage, a drizzle of avocado crema, and cilantro.
