INGREDIENTS
- 4 large live scallops
- 2 lime juice and lightly zested
- 1 pinch fresh chives
- 1 pinch fresh dill
- 1 pinch fresh basil
- 2 baby zucchini with flowers
- 4 splashes really expensive olive oil
- salt and pepper
METHOD
- Shuck the scallops, clean them and the shells. Slice scallops into 5 pieces. Place scallops into lime juice for 5 minutes.
- Place scallop into the cleaned shell, garnish with fresh herbs, olive oil, sliced zucchini and torn flower. Season with salt and pepper and serve!!
