INGREDIENTS
- 1 ½ lb trimmed and cubed pork loin roast
- 2 tbsp olive oil
Spice Rub
- 1 tsp garlic powder
- 1 tsp red pepper flakes
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp celery salt
- ½ tsp dried thyme
- ½ tsp salt
METHOD
- In a large bowl, combine all the ingredients
- Add the cubes of meat to the spice rub and coat well. Toss with the oil and marinate for 15 minutes, or cover and refrigerate overnight
- Preheat the grill, setting the burners to high. Oil the grate
- Thread the meat onto skewers. Brush with oil. Grill the skewers for 8 minutes or until medium doneness, turning them halfway through cooking.
| NOTE | The spice rub can be made in large quantities and stored in an airtight container for several weeks at room temperature.
