INGREDIENTS
- 12 soft hamburger buns
- 1 x 5-7 lb bone-in pork shoulder
- 2 cups apple juice
- 1 beer
- 1 lime
- 3 tbsp favourite rub
- 1 cup bbq sauce
Slaw
- 1/2 head julienne celeriac
- 5 stocks julienne asparagus
- 12 julienne sugar snap peas
- 5 julienne radishes
- 1/2 julienne cucumber
- 1/2 julienne red pepper
- 1 julienne carrot
- 1 hand full julienne mint
- 1 hand full julienne basil
- 1 hand full julienne parsley
- 1/2 cup mayo
- 1/2 cup yogurt
- 2 lime juice and zest
- 2 tbsp mustard
METHOD
- Pre heat your bbq to 225
- Rub the pork shoulder with spice rub and place in bbq fat side up
- Place apple juice, beer and lime juice into a spray bottle and spritz the pork every 1/2 hour. Smoke for 3 hours then turn
- Bring temperature up to 250 and smoke for another 6-8 hours
- Remove let rest for twenty minutes. Softly pull meat apart with hands and glaze with bbq sauce
- SLAW – Mix all ingredients into a lager bowl and toss softly. Please don’t over mix. Season and let rest
- On a hamburger bun pile 5 oz of pulled pork top with summer slaw and serve. This will also work as a taco, on top of a burger or a dog
