INGREDIENTS
- 2lbs cubed stewing beef
- 1 big dice large onion
- 5 minced cloves garlic
- 2 chopped ginger
- 1 thick slice large carrot
- 1 thick slice large parsnip
- 1 cut into thick pieces large potato
- 10 slices in half green beans
- 1 cinnamon stick
- 2 star anise
- 1.5L water or beef stock
- 1 tbsp vegetable oil
- 1/5 tsp kosher salt
- ¾ tsp fresh cracked black pepper
METHOD
- Pre-heat croc pot, dutch oven, or large heavy bottom pan to medium high heat.
- Add oil and sear beef on all sides for 3-4 minutes.
- Add onions and garlic and lightly brown.
- Add in all remaining vegetables except beans and add stock or water, salt, pepper and spices. Bring to a boil then reduce to low heat and stew for 2-2.5 hours or until beef is very tender.
- Add beans a few minutes before serving.
