INGREDIENTS
- 4 8oz each Snapper Filets
- 2 segmented Oranges
- 1 segmented Pink Grapefruit
- 1 zest Lime
- 1 tbsp Ginger grated
- 1/2 cup Julienne Red Onion
- 1/2 cup chopped Kalamata Olives
- 2 tbsp chopped Chives
- 1 Small bunch Cilantro chopped
- EVOO
- Salt & Pepper
METHOD
- Place the onions, ginger, lime zest and olives in a bowl, season with salt and pepper and set aside for a few minutes.
- Then add orange and grapefruit segments, chives and some chopped cilantro, season to taste and douse with olive oil.
- Pan sear the fish filet and once cooked top with the citrus salsa.
- Serve the fish with steamed potatoes.
