INGREDIENTS
- 4 cups cut Watermelon 1 inch cubes
- 1 ripe Avocado cubed
- 1/2 cup Feta cheese 1 inch cubes
- 1/2 cup Red onion Thinly sliced
- 1/2 cup Apple cider vinegar
- 1/2 cup fresh Mint chopped
- 1 tsp course Sea salt
- to drizzle Olive oil
METHOD
- Place red onion slices and vinegar into a small bowl to pickle
- Arrange watermelon, avocado, and feta pieces on plate in checkerboard pattern
- To serve, sprinkle with mint, olive oil and balsamic
