INGREDIENTS
- 1 1/2 lb (21/25 in size) peeled and deveined shrimps
- 1 peeled, sliced, cut into sticks cantaloupe
- 10 thin slices Prosciutto crudo

Sauce
- 1 roasted, peeled and chopped red pepper
- 2 tbsp chopped red onion
- 2 cloves chopped garlic
- 2 tbsp chopped parsley
- olive oil
- 1 tsp sugar
- salt and pepper
METHOD
Wrap each stick of melon with the prosciutto, cut into pieces about one-inch length and set aside. Prepare the skewer by inserting a shrimp and a melon four times into an 8-inch bamboo skewer, end the sequence with a shrimp. Grill on a lively fire for about 2 minutes on each side.
