INGREDIENTS
- 2 x 8oz skirt steak
- 3 cloves crushed garlic
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tsp honey
- 2 tsp smoked paprika
- 3/4 tsp cumin
- 3/4 tsp cayenne
- 1 cup halved cherry tomatoes
- 2 tsp extra virgin olive oil
- 1/2 tsp maldon salt
- 1/2 tsp fresh cracked black pepper
- 10 stalks roughly chopped parsley
METHOD
1) In a mixing bowl combine all marinade ingredients except skirt steak. Pour into a large Ziploc bag, add skirt steak and marinate for minimum 2 hours, maximum overnight.
2) Heat a grill pan on high heat. Spray lightly with cooking spray and grill steaks for 3 minutes on first side and 90 seconds on the other side.
3) Allow to rest for 5 minutes before slicing 1 inch pieces against the grain.
4) Top evenly with garnishes.
