INGREDIENTS
- 1lb highest quality (diced) beef tenderloin
- 1 tbsp grain mustard
- 1 tbsp chopped capers
- 2 tbsp chopped chives
- 2 tbsp chopped cornichon
- 2 egg yolks
- 1 juiced lemon
- 4 splashes Worcestershire sauce
- heavy salt and pepper
Crustinni
- 3 slices white bread
- 2 tbsp butter
- 3 tbsp grated parmigiana
- 3 tbsp sesame seed
METHOD
Butter bread and coat one side with sesame and parmigiana. Toast good side down on medium low heat in a cast iron pan. Flip toast empty side for one min and remove.
Beef
- Place all ingredients into a stainless steel bowl and mix. Season, taste and season again.
- Place tartare on good side of toasted bread and cut into 4 or 6. Garnish with chives and capers
