Elevate your picnic with these delicious sandwiches. Wrap them in parchment before packing.
Smoked Trout, Cucumber and Horseradish Sandwich with Red Onion, Soft Brie on Dark Rye
Ingredients:
2 cup flaked smoked trout
1 cup peeled, seeded and sliced English cucumber
1 tbsp sour cream
2 tsp grated fresh horseradish
1 whole lemon (zested and juiced)
2 tbsp chopped dill
1 tbsp chopped gherkins
1 tbsp chopped shallots
2 tsp chopped capers
1/2 red onion finely sliced
8 small slices of brie
8 slices of dark rye
1 cup organic watercress
In a large bowl mix the lemon zest, juice, sour cream, horseradish,
dill, gherkins, shallots and capers. Then fold in the smoked trout.
Spread the trout mix over four slices of bread, topped with the sliced
cucumber, sliced red onion, brie, watercress and then the remaining
four slices of bread. Serve immediately or wrap in cling film to
insure soft fresh bread.
