INGREDIENTS
- 3 cups Brussels sprouts cut in half
- 2 tbsp extra-virgin olive oil
- 1/2 roughly chopped white onion
- 2 chicken breasts cut in 1 inch cubes
- 1 red pepper cut in thin slices
- 1 zucchini cut in 2 inch cubes
- 2 celery roughly chopped
- 1 tsp oregano
- 1 tsp chili flakes
- 1 tsp red chili powder
- Pinch Salt and pepper
METHOD
1. In a pot, steam or boil the Brussels sprouts until tender but not soft, do not overcook (place on high heat and cook 5 minutes).
2. In a separate skillet, heat oil over medium heat, add onions cooking for approximately 1-2 minutes.
3. Add chicken cubes to skillet and cook until browned.
4. Add red pepper, zucchini, celery, oregano and chili flakes, sauté for 2 minutes.
5. Add the Brussels sprouts and red chili powder; let it cook for additional 2 min, stirring occasionally.
6. Top with salt and pepper to taste and enjoy!
