Amp up your turkey sandwich with avocado, mango salsa, and peppery arugula.
Grilled Turkey and Avocado Sandwich
1 whole grilled turkey breast (sliced)
1/2 cup arugula
1/2 avocado
1/2 mango
1/4 cup sliced red onion
1 tbsp chopped cilantro
1 tsp chopped red chilli
1 tbsp lemon juice
1 whole tomato (sliced)
8 slices spelt bread
1/2 cup goat cheese
1) Small dice the mango and avocado.
2) Mix with the sliced red onion, chopped chilli, cilantro and lemon juice. Season with salt, pepper and set aside.
3) Toast the spelt bread and then spread with the goat cheese.
4) Layer the sliced grilled turkey, arugula, sliced tomatoes and avocado relish between two of the toasted bread. Serve immediately.
