INGREDIENTS
- 12 eggs
- 6 oz goat cheese
- 1/2 cup diced white onion
- 1/4 cup diced red pepper
- 1/2 cup fresh chopped cilantro
- 1/2 cup broccoli florets
- 1/4 cup green olives sliced
- 1/4 tsp salt
- 1/4 tsp pepper
METHOD
- Break the eggs into a mixing bowl and beat until smooth.
- Add diced onion, red pepper, cilantro, broccoli florets, green olives, salt and pepper. Mix thoroughly.
- Divide mixture into 12 medium-sized, greased muffin tins and bake at 400 F for 15 minutes.
- Remove from oven and cool. Serve immediately or wrap and freeze for grab-and-go protein options.
