INGREDIENTS
- 2 cups chickpea flour
- 1 1/2 tsp baking powder
- 2 eggs
- 1 cup + 2 tbsp full fat milk
- 4 tbsp extra virgin olive oil
- 1 cup chopped zucchini flowers
- 1 bunch green onions chopped
- salt and pepper to taste
Raw vegetable salad
- 1 small zucchini thinly sliced
- carrot thinly sliced
- celery thinly sliced
- radishes thinly sliced
- arugula
- micro greens
- olive oil
- Pomegranate vincotto
- salt and pepper to taste
METHOD
For the waffles:
- Place the milk in a bowl, add the eggs and the oil and season with some salt and pepper and mix. Add the chickpea flour and baking powder. Mix well.
- Add the green onions and the zucchini flowers and mix. Set aside.
- Warm the waffle iron and make the waffles.
For the salad:
- Mix all the ingredients together and place on top of the waffle. Drizzle some olive oil and salt and pepper, finish with the vincotto. Serve.
