INGREDIENTS
- 1/2 pint thinly sliced strawberries
- 3 heads radicchio cut in half
- 1 head frisee washed and picked
- 2 cups sliced and toasted almonds
Buttermilk blue cheese dressing
- 1/2 cup buttermilk
- 140g blue cheese
- 1/2 lemon juiced
METHOD
- Grill or Roast radicchio until edges are browned and softened (if using oven 400F degrees for 10 – 12 minutes, on the grill on medium heat for approximately 3 mins per side). Cool completely.
- Blend buttermilk, blue cheese, and lemon juice.
- Arrange roasted radicchio, frisee, and strawberry on a family style platter. Top with dressing, followed by almonds.
