Mint Granita (Frozen, Sweet)
Ingredients:
- 1/3 cup mint leaves, finely chopped

Directions:
- In a saucepan bring 2 cups of water to a boil, remove from heat.
- Finely chop the mint and add to the water to infuse for 10+ minutes or more.
- Strain the infused water into a container and freeze, uncovered for 1 hour or so. After 1 hour scrape with a fork to break up the mixture. Keep repeating until the texture is a snow-like texture of ice crystals.
- Can keep in the freezer for up to 2 weeks.
Seafood Seasoning Aioli (Savoury, Creamy)
Ingredients:
- 1 glove of garlic, minced
- 1 tsp Dijon mustard
- 1 egg yolk
- 1/4 cup EVO
- Juice of 1 lemon
- 1 tsp Old Bay or your fav seafood seasoning

- Place all contents into a blender or shaker and mix up until mixed through.
- Can keep in an airtight container in the fridge for 3 days approx.
Old School Marie Rose Sauce (Savoury, Creamy)
Ingredients:
- 3 tbsp. of mayo
- 1 tbsp. capers
- Juice from 1 lemon
- 1 tbsp. of ketchup
- Dash of Worcestershire sauce
Directions:
- Combine all ingredients into a mixing bowl and combine.
- Can keep in an airtight container in the fridge for 3 days approx.
Ponzu Sauce (Savoury)

- Juice from 2 limes
- 1 tbsp. rice wine vinegar
- 1 tbsp. of Furikake seasoning
Directions:
- In a mixing bowl, combine all the ingredients and mix well.
