Fresh corn is a summer essential that adds sweetness and life to any meal. However, if corn is not cooked properly, the natural sugars can turn to starch and remove the freshness and sweet flavour. Professional home economist Mairlyn Smith shares her expert tips on cooking corn the right way!
- Bring a large pot of water to the boil.
- Add farm fresh, husked corn to the water, return to a boil and boil for one minute.
- Turn the heat off, remove from the pot OR if you don’t like tender crisp vegetables let them sit in the pot of hot water for an extra 2-5 minutes.
- If you prefer tender crisp, boil for the one minute and remove the cobs.
Note: This is for fresh corn, the older the cobs are the starchier they become. And no matter of boiling is going to bring back the sweetness. This is why some people add sugar to the water.
