Chef Shahir Massoud serves grilled cherry tomatoes with seared halibut, basil pesto and aioli for a lovely summer meal.
Quick grilled tomatoes
Ingredients:
2 pints grape tomatoes or 4 bunches of cherry tomatoes on the vine
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper
2 cloves garlic, minced
1 tbsp fresh oregano, chopped
Method:
- Marinate tomatoes in olive oil, salt, pepper, garlic and oregano.
- Grill on high heat for 2-3 minutes or until blistered and cooked though.
