Chef Massimo’s croquettes
Flavour Chef Massimo Capra’s crispy and tender croquettes with whatever combination you like. We love the jamon serrano and salted cod!
Croquettes Massimo-style
Ingredients:
100 g butter
120 g flour
500 ml milk
200 g mashed potatoes, cold
100 g onions, finely chopped
Nutmeg
Salt and pepper to taste
2 eggs, beaten
3 tbsp white flour
Bread crumbs
Vegetable oil for frying

Bacon and onions
Sausage, onions and sundried tomato
Lobster and chives
Baby shrimps and green onions
Salt cod
Lobster with sriracha, tomato and aioli
Bacon with sour cream, chives and aioli
Salt codfish with aioli
Method:
1. Preheat milk to the boiling point. In the meantime, melt the butter in a sauce pan. Add the flour and stir well until golden. Remove from heat and add the preheated milk. Whisk well and return to the stove.
2. Season the béchamel with salt, pepper and a dash of nutmeg. Cook for at least 10 minutes. Then add the mashed potatoes and stir well. Remove from the heat and add the flavoring of your choice.
3. Once the mixture is cooled, form the croquette (about the size of a walnut). Cool in the refrigerator for at least one hour.

4. Roll the cooled croquettes in flour and then dip in the beaten egg. Finally, roll in the bread crumbs.
5. Fry in hot oil until crispy and golden. Serve hot with aioli on the side.
