Dan Clapson shares a recipe for a delicious sandwich that uses a combination of chicken and chickpeas to update and extend a classic chicken salad sandwich.
Chickpea Chicken Salad Sandwich Filling
Yield: 4 cups | Total time: 10 mins
Ingredients:
2 cups roughly chopped cooked chicken meat
1 cup cooked chickpeas
2 stalks celery (thinly sliced)
2 tbsp finely chopped fresh dill
2 tbsp finely chopped Italian parsley
3 tbsp mayonnaise
1 tbsp grainy dijon mustard
2 tsp extra virgin olive oil
1 lemon, zest and juice
Salt and pepper (to taste)
Method:
- Place all ingredients in a medium bowl and stir well to combine. Keep refrigerated and use as desired.
- This sandwich filling will keep for up to 3 days, but is best used the same day.
