Here’s Chef Devan Rajkumar’s recipe for creating a tandoori masala spice blend at home using coriander seeds, cardamom pods, fenugreek seeds and other whole spices.
Homemade tandoori masala
Ingredients:
20 red Kashmiri chilies, dry
4 tbsp coriander seeds
4 tbsp paprika
1 tbsp cumin seeds
2 tsp black pepper seeds
1/2 tbsp whole cloves
1/2 tbsp whole cardamom pods
2 tsp ginger powder
2 tsp garlic powder
1 tsp whole fenugreek seeds
2 x 2-inch cinnamon sticks
1/2 tsp nutmeg
Method:
1. Dry roast all whole spices until fragrant and then blend to a fine powder.
2. Combine with all other ingredients.
3. Pass through a fine sieve and store in an airtight container.
