Madras curry powder
Ingredients:
13 tbsp coriander seeds
15 tbsp turmeric powder
1 1/2 tbsp fenurgreek seeds
10 tbsp dry ginger powder
3/4 cup peppercorns
120 red chilies, dried
265 green cardamom pods
80 cinnamon sticks, 2 inches long
Method:
1. Roast the coriander seeds on low heat until fragrant.
2. Combine with all other ingredients and blend to a fine powder.
3. Pass through a fine sieve and store in an airtight container.
