Eggplant dip is the new hummus! Once the eggplant is roasted, this recipe takes minutes to make.
Eggplant dip
Ingredients:
1 eggplant
1/4 cup peanut butter
1/4 cup lemon juice
1 garlic clove
1 tsp salt
Toasted pitas for serving
Method:
1. Place eggplant on a foil-lined baking sheet. Roast at 450 F until very soft, 30 minutes.
2. Let cool, then scoop out flesh. Transfer to a food processor and whirl with peanut butter, lemon juice, garlic and salt until smooth.
3. Serve with toasted pitas.
