Mary Jo Eustace’s got this recipe from her friend Denise. It’s unique and flavorful and very low in fat—no tahini required!
Rosemary balsamic hummus
Makes approximately 3 cups
Ingredients:
2 sprigs fresh rosemary
1 clove garlic
Two 15 oz cans chickpeas
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1/4 cup water
Salt and black pepper to taste
Method:
1. Purée all ingredients in a food processor.
2. Served with a drizzle of balsamic glaze and a sprig of fresh rosemary, if desired.
