Kale is very trendy right now. Cooked or in a salad, it adds zing to everyday dishes and is beyond good for you. This is a salad Mary Jo Eustace had at the Soho Club in Los Angeles.
Kale magic
Serves 4
Ingredients:
4 cups kale, julienned
Olive oil
1/2 lemon, juiced
2 avocados, diced
1 cup cooked quinoa
1/2 cup pistachios
Salt and pepper to taste
Method:
1. In a large bowl, toss the kale with a little olive oil and the lemon juice to soften the kale.
2. Add the avocado, quinoa, and toss again.
3. Finish off with a little more olive oil, the nuts, and salt and pepper to taste.
