12 Days of Cookies, Day 6: Pumpkin spice cookies

Pumpkin spice cookies
Cookie ingredients:

- 1 pkg. (8 oz) cream cheese, softened
- 1 1/2 cup packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 cup canned pumpkin
- 1 tsp vanilla extract
- 3-1/2 cup all-purpose flour
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp ginger
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp baking powder
Frosting ingredients:
- 2 cups confectioners’ sugar
- 1/4 cup butter, softened
- 1 tsp vanilla extract
- 2-3 tbsp boiling water
- 2 cups chopped pecans
Method:
In a large mixing bowl, beat cream cheese and sugars until smooth. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla. Combine dry ingredients; gradually add to pumpkin mixture.
Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake at 350F for 10-12 minutes or until golden brown. Remove to wire rack to cool.
For frosting, in a bowl, combine the confectioners’ sugar, butter, vanilla and enough water to achieve frosting consistency. Frost cookies, sprinkle with pecans.
