Stained glass sugar cookies
Makes 40 cookies
Ingredients:

- 1/2 cup room temperature butter
- 1/2 cup sugar
- 1/2 cup honey
- 1 egg
- 1 tsp vanilla
- 3 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 1/2 lime, zest & juice
- hard candy (Jolly ranchers or life savers, separated & crushed)
Method:
With a hand blender or stand mixer, whip butter, sugar, honey and egg until light and fluffy.
Slowly add flour, baking powder, soda, vanilla, lime zest, juice and salt. Wrap and refrigerate for 2.5 hours.
Set oven to 350 F. Roll out dough to 1/4-inch, and punch out desired shapes with cookie cutter.
With 1-inch ring mold, punch out a window in cookie. Place cookies on a silicone pad or non-stick baking pads. Fill window with crushed hard candy.

Bake for 7 minutes or until slightly golden. Remove, let cool and enjoy.
