Cauliflower is hearty and versatile. You can slice, grill or even pan roast it. Chef Corbin Tomaszeski spices up the new “it” veggie with lime zest and minced jalapeno.
Lime and jalapeno cauliflower popcorn
Serves 2
Ingredients:
1 head orange cauliflower, cut into half-inch pieces
2-3 tbsp extra-virgin olive oil
1/2 jalapeno pepper, minced fine
Juice and zest of one lime
Salt black pepper to taste
Method:
Preheat your oven to 400 F.
In a large bowl, toss the small cauliflower florets with the olive oil, lime zest and lime juice. Then season the tossed cauliflower lightly with salt and ground black pepper.
Line a small baking or cookie tray with parchment paper. Spread the seasoned cauliflower pieces evenly onto the baking tray.
Place the tray into the oven and roast the cauliflower until tender and golden brown in colour, approximately 25 minutes.
Remove the tray from the oven and serve while still warm.
