Quick entertaining: mini lemon meringue, quiche and empanadas
These bite-sized apps and desserts are perfect for a entertaining.
Cake in jars
Break or cut up pieces of cake in cubes.
Layer with lemon pie filling and icing or whipped cream.
Note: whipped cream works if eaten the same day. If making in advance, add whipped cream last or replace with your favourite icing.
Mini quiche
Oil mini muffin tins well or use paper liners.
Whisk eggs (as many as you feel like preparing) and fill muffin tin three-quarters of the way.
Add finely-diced vegetables or cooked meat.
Bake at 350 F for 10 to 12 minutes until centre is set.
Note: Increase baking time if using regular-sized muffin tin.

Mini empanadas
Roll out pie crust. Cut with round cutter.
Fill with cooked meat, vegetables and cheese.
Fold over and crimp edges to seal well.
Brush with egg wash or milk for a nice shine.
Bake 425 F for 12 to 15 minutes until dough is lightly browned
