Make this gazpacho after stocking up on veggies at the farmer’s market. No cooking required!
Market fresh gazpacho
Ingredients:
- 1 English cucumber, peeled, seeded and coarsely chopped
- 1 red bell pepper, coarsely chopped
- 1 green pepper, coarsely chopped
- 1/2 white onion, coarsely chopped
- 8 vine tomatoes, peeled, seeded and coarsely chopped
- 1/4 cup (60 ml) olive oil
- 2 tbsp (30 ml) chopped fresh coriander
- 1 tbsp (15 ml) white wine vinegar
- 2 garlic cloves
- Juice of 1 lime
- Salt to taste
- Pepper to taste
- tabasco sauce, to taste
Method:
In a food processor or blender, puree cucumber, peppers, onion and half the tomatoes. Set aside in a large bowl.
Puree remaining ingredients and add to the bowl. Season to taste and refrigerate for 2 hours.
