Nothing welcomes summer better than a bright, fresh citrus salad! This recipe has a delicious mixture of yummy fruit and herbs. Walnuts and pomegranate add the perfect crunch.
Citrus salad

Serves 4
Ingredients:
Salad:
- 2 large orange
- 2 large grapefruit
- 1 fennel bulb
- 1 bunch basil
- ½ dragonfruit, sliced
- 2 black plums, sliced
- ½ pomegranate seeds
- 1 packaged mixed field greens
- 2 cups mixed field greens
- 1 cup parsley leaves
- ½ cup basil leaves
- 1 cup walnuts
- ½ cup feta
Dressing:
- ½ cup olive oil
- 1 tbsp dijon
- 1 garlic clove
- 1 tbsp honey
- 1 small shallot
- 1 tsp fennel seeds
- ¾ tsp sea salt
- ½ tsp fresh cracked black pepper
Method:
Peel orange and grapefruit. Using a paring knife, carefully cut along the membranes to release the segments. Set aside and squeeze remaining juice from the scraps into a bowl.
Combine reserved Dijon, fruit juice, garlic, shallot and honey in blender and blend until incorporated. Slowly drizzle in olive oil until mixture emulsifies. Add salt and pepper.
Toss greens together with 2-3 tbsp of dressing until it coats well. Layer the salad in bowls with fruit, walnuts and top with feta.
