Whoever said salads were boring was seriously mistaken. With so many fresh ingredients coming into season, our minds are filled with different kinds of salad variations. From having something a little lighter at lunch, to making a big and delicious dinner salad, the possible ingredient combinations are endless. We’ve decided to break up our favourite salads for spring into three categories: something light, something filling, and something different, to encourage you to get creative with your salads this season!
Something light:
When most people think of salads, they might just think of a bunch of lettuce on a plate with a bit of dressing – not that interesting, right? But salads don’t need to be that boring or even have any lettuce at all! Check out this Green bean and blueberry picnic salad. With crunchy almonds and delicious bursts of blueberries, this dish is great for utilizing blueberries while they’re still in season.
Another great salad is this Israeli chopped salad. The short ingredients list makes it a super easy dish to make – perfect for a quick lunch!
For something that can be easily prepped the day before, try this Shredded rainbow salad with lemony avocado dressing. It’s great to pack for lunch for work the next day and has beautiful colours that make us think of spring.
Something filling:
Using a salad for dinner is a great way to incorporate veggies into your meal without compromising on flavor. This Bell peppers and chicken salad is packed with flavor not just from sweet peppers, but from mango, cilantro, and peanuts too! It also makes for a great opportunity to get outside and fire up the barbecue!

Something different:
With so many fresh ingredients at your disposal in spring, why not try adding something new to your salad? This refreshing Arugula watermelon salad with shaved Parmesan is perfect to beat the summer heat.
