Spice things up with Chef Devan Rajkumar‘s flavour-packed fajitas!
Steak fajitas
Serves 4
Ingredients:
- 2 lbs flank or skirt steak, trimmed
- 1/2 green pepper, sliced
- 1/2 yellow pepper, sliced
- 1/2 red pepper, sliced
- 1/2 red onion, sliced
- 2 tsp white wine vinegar
- Tortillas
- Salt & pepper
Marinade ingredients:
- 1/2 cup vegetable oil
- 1/2 cup soy sauce
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 tbsp chili powder
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 orange, juiced
- 2 limes, juiced
Method:
Combine ingredients for marinade and marinate steak in a freezer bag for 12-36 hours. Remove meat from bag and wipe off excess marinade.
Preheat BBQ or grill pan to high heat and lightly brush with vegetable oil.
Lay down steak and sear for 1-2 minutes on each side or until a meat thermometer reads 125F.
Remove steak from heat source and allow to rest.
Use a cast iron pan (or the same pan used for the steak) on high heat. Add 1 tbsp vegetable oil and peppers. Season with 3/4 tsp sea salt and 1/2 tsp fresh cracked black pepper.
Add 2 tsp white wine vinegar.
Remove from heat and allow to rest before slicing on a bias against the grain.
