This fresh, gluten-free alternative to traditional tabbouleh makes a great side dish or summer potluck salad!
Quinoa tabbouleh
Ingredients:
- 3 cups cooked quinoa
- 1 cup cherry tomatoes
- 1 cup rough chopped parsley
- 1/2 finely chopped red onion
- 1/2 cup rough chopped mint
- 1/2 cup feta cheese
- 1 lemon, juiced
- 1/3 cup extra virgin olive oil
- Freshly ground pepper
Method:
Toss in a large bowl and serve.
