Garlicky rapini
Serves: 4-8
Ingredients:
- 1 bunch rapini
- 1 Tbsp (15 mL) oil
- 4 cloves garlic, minced and set aside
Method:
Bring a medium saucepan of water to the boil.
Meanwhile, rinse rapini well under cold running water.
When the water comes to the boil, plunge rapini into water for 2-3 minutes.
Drain well and let slightly cool.
Chop into 2-inch pieces.
Heat a large skillet over medium heat, add oil and garlic and sauté for 1 minute, add rapini and heat through, serve.
